PENOKI MUSHROOM RECIPE – Flammulina veluptipes or enoki myshrooms is an edible type of a mushroom and here are some sample recipes.

This is also called Enokitake mushrooms or Enokidake mushrooms. This type of an edible mushroom has a long and thin stems with small caps that comes in bunches. Chinese call this “jingu” while Koreans refer to it as “paengi beoseot”. In Vietnam, it is “Tram Vang” or “Kim Cham”.

Ingredients:

  • 14 ounces enoki (400g)
  • 2 tablespoons oil
  • 2 cloves of minced garlic
  • 3 tablespoons light soy sauce
  • ½ teaspoon sugar
  • 1 finely chopped scallion 

Instructions:

  1. Wash the enoki carefully and tear them into nite sizes using your hands.
  2. In a wok of boiling water, blanch and cook the mushrooms for 1 minute.
  3. In a saucepan, heat oil over medium heat. Saute the garlic for 10 seconds, then after that, add the light soy sauce, sugar, and scallions. Then turn off the heat. Avoid overcooking the garlic and scallions.
  4. Pour the sauce on top of the mushrooms then serve and enjoy.

Ingredients:

  • 400 g Enoki Mushrooms
  • 150 g Tempura Flour
  • 200 ml Iced Water

  • Vegetable Oil for frying

For spicy mayo:

  • 3 tbsp Vegan Mayonnaise
  • 2-3 tsp Sriracha Sauce

  1. Tear the mushrooms into smaller bunches.
  2. Mix tempura flour, water, paprika powder, and garlic powder in a bowl until you reach a smooth consistency.
  3. In hot oil, put the small bunches of mushrooms dipped and covered with the tempura mixture. Do this one by one to avoid the small bunches sticking to each other.
  4. Cook until golden brown.
  5. For the spicy mayo, mix the ingredients and serve with the fried mushrooms. Garnish with green onions and enjoy.
