pH in food is a major factor affecting the food’s appearance, texture, flavor, nutritional value, and safety. Usually, the pH in foods ranges from 2 to 7.
Here’s what the pH number means:
- pH of 0 indicates a high level of acidity
- pH of 7 is neutral
- pH of 14 is the most basic, or alkaline

- most fruits
- herbs and spices, excluding salt, mustard, and nutmeg
- beans and lentils
- some whole grains, such as millet, quinoa, and amaranth
- herbal teas
- fats like olive oil, avocados, nuts, and seeds
