CORN SALAD – Here’s a sample recipe for a refreshing and healthy corn salad, an all-time favorite summer side.

In a previous post, corn is an excellent source of fiber, vitamins, minerals, and antioxidants. It has a number of vitamins like vitamin B5 (pantothenic acid), vitamin B9 (folic acid), vitamin B6, vitamin B3 (niacin), and potassium.

  • Carbs: 21 grams
  • Sugar: 4.5 grams
  • Fiber: 2.4 grams
  • Fat: 1.5 grams

Tortilla chips, polenta, cornmeal, corn flour, corn syrup, and corn oil are the standard products made out of this and one dish that is mainly made of this, as well, is corn salad.

This dish is basically made of fresh-cut corn kernels, sweet tomatoes, vibrant red onions, crisp cucumbers, flavorful feta cheese, fresh herbs, and a dressing. It is an all-time favorite summer side that offers a sweet taste from corn that blends perfectly with the tastes of other ingredients.

It comes so well with chicken, steak, or salmon.

Based on the Delish post, these are the ingredients:

  • 4 c. fresh or frozen corn, rinsed and drained if frozen, and steamed, boiled, or grilled if fresh
  • 1 c. cherry tomatoes, halved
  • 1/3 c. crumbled feta
  • 1/4 red onion, finely chopped
  • 1/4 c. fresh basil, thinly sliced
  • 3 tbsp. extra-virgin olive oil
  • Juice of 1 lime
  • Kosher salt
  • Freshly ground black pepper

In a large bowl, just toss everything and gently mix together. Put salt and pepper to taste and adjust according to your liking. You may also add mayo for a light and creamy coating and some jalapeno to spice it up.
